Situated in Congy in the Valley of Petit Morin, young and talented Aurélien Clement has taken over the family business and is in the conversion to biodynamical farming whilst maintaining manual tradition and handicraft. Every step of the winemaking process is done carefully by hand. 

Aurélien uses indigenous yeast, minimal sulphites and no filtration and the resulting champagnes show complexity and clarity with a nice touch of saltiness. The cuvées are named after the flowers that grow in the respective vineyards. 

A name to watch for serious champagne lovers.
